Happy Saturday! N & I are going over to Bri & Lee’s tonight for a little homemade pizza night! I am in charge of bringing dessert aka COOKIES. I decided to make my mother’s monster cookies because they contain, well, EVERYTHING DELICIOUS. It was also a great opportunity for me to use this little beauty:
Recipe: Monster Cookies
From the Kitchen of: Debi Cooper
1 1/4 c. packed lt. brown sugar
1 cup granulated sugar
1/2 tsp salt
1/2 tsp vanilla
1 – 12 oz. jar creamy peanut butter
1 stick butter (softened)
1/2 c. M&M’s, plain (or I used peanut butter if you’re a PB freak like we are!)
1/2 c. chocolate chips
1/4 c raisins (I omitted the raisins due to hubs’ dislike)
2 tsp. baking soda
4 1/2 c. quick cooking oatmeal (not instant)
Preheat oven 350 degrees
Line cookie sheets with parchment paper (if available)
In a very large bowl, combine eggs & sugars. Mix well.
Add salt, vanilla, peanut butter, & butter. Mix well.
Stir in M & M’s, chocolate chips, raisins, baking soda, and oatmeal.
Drop by TBSP 2″ apart on to cookie sheets.
Bake 8-10 minutes. Do not overbake!
Let stand for 3 minutes before transferring to wire cooling racks.
